Food (Glenbeigh N.S. Folklore Project)

  • Most food was grown at home. Cabbage, carrots, potatoes, onions were all grown on the farm.
  • For meat, they had bacon and chicken. Small pigs (bonamhs) were bought at the fair and were fed with potatoes and leftover food.
    • Neighbours would help with killing the pig when it was fattened.
    • Bacon was shared with the neighbours.
    • The bacon was left hanging for 5 days before salting.
    • They would have pig’s head, crubeens and black pudding.
  • They would eat chicken [not the rooster] for Sunday dinner.
  • They would sell the turkeys just before Christmas. They would keep one to hatch again. They would sell the others to buy extra stuff for Christmas. They would buy flour in Evans shop – a full sack and a full bag of sugar.
  • They baked bread at home, on the open fire, using a griddle like an oven with the coals on top of the cover and the fire underneath.
  • They got cocoa and tea in parcels from America.They also bought tea.
  • They had a bag of flour and a bag of meal and they mixed the meal and flour with sour milk to make bread.
  • They made a white cake and a brown cake of bread each day.
  • Fish came from the river (Poll Joaney). Father always brought home fish.
  • No shopping for food – only items bought were paraffin oil, tea, sugar and flour.
  • Butter was made in a churn. Cow’s milk was collected and was mixed with a dasher – a flat piece of wood with a long handle. It was gathered together and salted to preserve it.
  • Buttermilk was a popular drink. Milk came from cows. They were milked by hand – sitting on a 3-legged stool, using 2 hands to milk a front pap and a back pap.
  • They ate eggs, laid by the hens, and sold some.
  • The cock chickens were fattened for eating, they also ate rabbits.
  • Potatoes were a very common food.
    • The farmer used a spade to turn a “taobhfhód” to make a ridge.
    • There was no artificial fertiliser only farmyard manure or seaweed.
    • Potatoes were cut into sciolláns (at least one eye –maybe 2.) and placed in the ridge.
    • When the stalks grew, they dug the furrow – the space between 2 ridges – and they covered the stalks with more earth.
    • Potatoes were dug in October and were stored in a pit or outhouse.
